Ingredients

  • 1 1/2 cups quinoa
  • 1/2 cup toasted sliced almonds
  • 1/2 cup organic dried cherries 
  • 1/3 cup chopped scallions
  • 1/4 cup chopped fresh parsley
  • 4 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper 1
  • 1 cup feta cubed

Directions

  1. Cook the qunioa according to package
  2. Stir in the sliced almonds, dried cheries, scallions, fresh parsley, fresh lemon juice, olive oil, and salt and black pepper, and 1 cup feta cheese.
