  • 1 large egg, room temperature
  • 1 tsp. vanilla extract
  • 1 cup instant oat
  • ¾ cup whole wheat flour
  • ½ tsp. ground cinnamon 
  • ⅛ tsp. salt
  • 1 ½ tsp. baking powder
  • 2 tbsp. coconut oil, melted 
  • ½ cup honey
  • ¼ cup Graceland Dried Blueberries


In a medium sized bowl, whisk the oats, flour, baking powder, cinnamon and salt together. Then in a separate bowl, mix together the coconut oil, egg and vanilla. Stir in the honey until combined and then add in they dry mix until just incorporated. Fold in the dried blueberries. Next chill the dough for 30 minutes. Preheat oven to 325° Fahrenheit and put parchment paper on a baking sheet. Set the cookie dough into 15 rounded scoops onto the sheet. Bake for 13ndash;15 minutes. Let cool for 15 minutes until placed on a wire rack.
