Prep: 15 minutes


1 1/2 cups all-purpose flour
1/4 cup oats
3/4 cup coconut sugar
1 TBLS baking soda
1/2 tsp salt
2 eggs
1/2 cup melted coconut oil
1 cup Graceland Fruit blueberries


Preheat oven to 350 degrees. Cream together the eggs, oil, sugar, salt, and vanilla. Add flour, oats, and baking soda and mix until it forms a dough. Fold in the blueberries. Using an ice cream scoop, scoop out dough onto an ungreased baking sheet. Bake for 12 minutes. Let cool on pan for 3-4 minutes, then transfer to a cooking rack. Enjoy them as-is, or place a scoop of your favorite vanilla ice cream between two and create a sandwich!
