Prep: 15 minutes


  • 2 ½ cups all-purpose flour
  • 1 cup sugar
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • ½ tsp. baking powder
  • ½ tsp. salt
  • ⅓ cup vegetable oil
  • 2 large eggs, beaten
  • 1 cup unsweetened applesauce
  • ¾ cup Graceland Dried Cranberries


Preheat oven to 350° Fahrenheit and grease a 9.5 inch loaf pan. In a large bowl combine flour, sugar, baking soda, cinnamon, baking powder, and salt. In a separate medium sized bowl mix together oil and eggs and stir in applesauce. Add the applesauce mixture to the dry mixture and stir until combined well and smooth. Fold in the dried cranberries. Pour the batter into the loaf pan and bake for 55-65 minutes. Cool in pan for 10 minutes then remove and place on a wire rack to completely cool.
