Bursting with Natural Flavor

The Soft-N-Frozen process produces frozen fruit that is bursting with natural flavor. These ingredients already bring rich, natural fruit flavors to a wide variety of consumer products, including ice cream, frozen yogurt, fresh and frozen baked goods and other frozen dairy and non-dairy
products.

Graceland¹s innovative Soft-N-Frozen process combines Grade A fruit with sugars and a natural stabilizing system, which binds and controls the free water in fruit pieces, inhibiting ice crystal formation. The result is a fruit ingredient that will not completely freeze, remaining scoopable, while retaining fruit piece identity and natural color. Graceland offers three lines of Soft-N-Frozen ingredients that can be customized:

• Stabilized - contains 50% - 80% fruit in a stabilized matrix
• Premium - typically contains 85% fruit suspended in an infusion matrix of 15% or less
• Infused Frozen - contains up to 100% fruit

Unlike IQF fruits, these fruits can be added directly to consumer products with minimal thawing. The Soft-N-Frozen process preserves the integrity and character of delicate fruits, plus the pasteurization process ensures very low microbe counts.
